Rèmi Puyol is one of Languedoc’s most respected natural winemakers and his philosophy is simple: Le Temps Fait Tout, “Time makes everything”, time is the key ingredient for the production of a true, genuine and above all good wine. The Rémi hills are characterized by terraces consisting of pebbles, mainly granite and quartz, which contain a lot of silica, elements that give the wines lightness and a remarkable purity of fruit. These very stony soils allow for good drainage during heavy rains and store water thanks to the clay underneath. Rémi Poujol works there with his horse which with its 700 kg has a negligible weight compared to a tractor, and also guarantees a much more precise work.
