Francois St-Lô after a working period in restaurants and wine shops, and after years of apprenticeship with Olivier Cousin and Eric Dubois, acquires an almost enchanted place in the Loire Valley, in Berrie. As learned from his mentors, François prefers to work the vineyards on horseback, doing all the processes manually. With a labyrinth of underground caves, a prehistoric cellar and an 18th century wine press, Francois produces wines full of character, light and delicate, with a rare purity and finesse.
